Welcome as a Manta sailor. I didn't know my blog was available in Spanish wink
The centre-plate when lowered is supposed to look like the logo Mark has put on the top left corner of these pages, i.e. no gap between the keel and the centre-plate. If I understand well, in your case it is just a matter of adjusting the chain length.
Sail measures are beyond me, but if you want to have new sails made, the sailmaker will advise you.
Are you going to sail in the rias?
